Mashed Potato Soufflé

About 500g of leftover mashed potatoes
4 eggs
2 tablespoons fresh cream
Grated cheese
Salt & pepper


  1. Preheat the oven to 180° (thermostat 6)
  2. Grease a soufflé mold with a brush from bottom to top, to facilitate the rise of soufflé. Set the mold aside in the refrigerator
  3. Separate the yolks of the whites of the 4 eggs. In a bowl, mix the mashed potato with the yolks then pour the cream and finish by adding the cheese. Season it with salt and pepper
  4. Whisk the whites until they form peaks and pour onto the mashed potato
  5. Fill the prepared mold with the potato mixture. Bake it on the preheated oven for 30 minutes until the soufflé is puffed and golden
