Rice and Spinach Pie


Ingredients for crispy short pastry or pâte brisée:
180g Extra flour
90g butter
180g small swiss or fresh cheese
300g of rest of rice
600g spinach
400g semi-salt cheese
2 eggs
100g grated cheese
Salt & pepper
1 tablespoon of sugar
3 tablespoons of olive oil
250 ml to 300ml warm water


1/ Make the short pastry

  1. In a bowl or in the processor, mix the flour with butter and the small suisse
  2. Salt it and combine to obtain a dough. Let it aside in the fridge for few hours
  3. Remember to take it out at least 15 minutes before spreading out

2/Make the pie

  1. Wash and prepare the spinach. Put ii into a large skillet. Cover and cook for 5 minutes. Drain and let it cool. Squeeze them to remove the water
  2. Spread the dough on a floured surface or table. Then place in a buttered pan or try
  3. Whisk the eggs and the semi- salted cheese. Add salt and pepper
  4. Spread the rice at the bottom of the pan over the short pastry
  5. Add the spinach then pour the mixture eggs with cheese
  6. Sprinkle with the grated cheese on to
  7. Bake in the preheated oven about 35 to 45 minutes
